An interesting demographic mapping program is Great American History
Machine. This program allows you to make custom US or US local maps
combining historical US Govt demographic information. I don't know if it's
still available, or if you can do this online at a government web site.

Great American History Machine: an interactive atlas of the 19th and 20th
century: United States social and political history. ePress Projects,
Academic Software Develpment Group, Computer Science Center, University of
Maryland. 1995.
