The title you are looking for was from a series, the Kitchen Safety and
Sanitation series, c.1989. I'm sure you will not be able to find it as
a DVD.
The producer was:
Chatsworth, CA : Advanced American Communications ;
Hollywood, CA : National Education Media [dist.] was distributor.

I'd like to suggest something more up to date, and in DVD:
Knife care :
