Off the top of my head, some of the absolute best uses of the park are in
THE FISHER KING
MY FAVORITE YEAR
THE PRODUCERS
HAIR (with the added bonus of Twyla Tharp's choreography)

and some lesser:
STUART LITTLE (set?)
BANDWAGON (definitey a set, but hey, it's Fred)
EYEWITNESS

and remember, anything set at the Metropolitan Museum of Art would count as
well.
