Well, we're not converting to .mpg, we generally convert to .mov or
.avi...but in any case

We use (variously):

A Mac G4 with a sony D/V converter. We capture with either iMovie (if
we're lazy) or Media Cleaner and then crank these files into Real with the
Real Producer (or Media Cleaner)

Both Mac and Windows machines capture on the fly (in other words, they
convert to digital in roughly real time. Compressing the stuff takes
awhile...depends on the nature and length of the clip. Then it takes MORE
time to encode for Real.

or

A windows machine with a Pinnacle capture card and Premiere...again, using
RealProducer to crank the files into real...
