Perhaps part of extras on the DVDs?
I know Glory (special edition) has a lot of additional material, and I see
that a new DVD of Amistad is being released in January.

Only other thing that pops to mind is this documentary about Amistad, but
it has no connection with the movie:

Title: The Amistad Revolt "All we want is make us free" /
produced & directed by Karyl K. Evans ;
written by Jeremy Brecher.
Publisher:
New Haven, Conn. : The Committee, c1995.
Description:
1 videocassette (33 min.) : sd., col. ; 1/2 in. + 1
teacher's guide (iv, 34 p. : ill. ; 28 cm.)
Notes:
Accompanied by: Free men: the Amistad revolt and the
American anti-slavery movement : a
teacher's guide / written by Priscilla Searles.
Tells the story of the 1839 Amistad Revolt and the
ensuing campaign to free the Africans jailed for
murder and piracy.
